Coconut Saffron Salmon
This coconut, salmon, and saffron dish is warm but not overly spiced, and is perfect over steamed rice or alongside a hearty pile of greens.While saffron is a good idea to consume anytime, it’s even more beneficial during the winter months as it improves digestion and boosts immunity. January is the perfect time to warm up your kitchen with this cheerful yellow dish (especially if you weren’t too mindful about your digestion and immunity in December).*Note: The salmon can be replaced with another fish or chicken, or can be made vegan with the use of tofu or starch like squash and potato.
COCONUT SAFFRON SALMON INGREDIENTS
2 tablespoons coconut or olive oil, separated1 shallot, minced1 clove garlic, minced1 knob of ginger (about 1 inch), peeled and minced1 cup coconut milk1 tablespoon Saffron Latte Wellness Powder1 cup baby spinach1 lime1 8-ounce piece of salmon3 tablespoons cilantro, chopped
COCONUT SAFFRON SALMON ASSEMBLY
1 | In a medium saucepan add 1 tablespoon of oil for the sauce.2 | Add the shallot and cook for 3 minutes, stirring often. Add the garlic and ginger and cook for 1 more minute.3 | Add the coconut milk, saffron, and spinach. Bring to a boil, then reduce heat to low and let simmer for around 8 minutes, stirring occasionally. Squeeze in the juice of half a lime. Turn off heat while you prepare fish.4 | Warm another pan with another tablespoon of oil over medium-low heat. Season the salmon with salt and pepper. Raise the heat to medium-high. Place the salmon, skin-side up in the pan. Cook until golden, about 4 minutes. Turn the fish over with a spatula, and cook until it feels firm to the touch, about 4 minutes more, depending on the thickness.5 | Plate your salmon over steamed rice or greens. Spoon sauce over the salmon fillets and garnish with cilantro. Serve warm.
