This Clean Pop Tart Recipe is Actually Healthy Enough for Breakfast

Pop tarts are a favorite in my family. It all began years ago when my brother asked me to make him the popular breakfast treat. The first version was an unglazed strawberry tart that definitely could have been healthier. Over the years, my tarts’ mixings changed with the seasons, until eventually I landed on a crowd favorite the whole family agreed upon…  a homemade berry jam pop tart with mixed berry frosting — and, while it still may not be the healthiest thing you’ve ever eaten for breakfast, it just might be the most delicious.

CLEAN POP TART INGREDIENTS

DOUGH

1½ cups Rye Flour1 cup Bread or All Purpose Flour½ pound Butter ½ cup Apple Cider Vinegar, chilled¾ cup Water, chilled1 teaspoon Salt1 tablespoon Coconut Sugar 1 jar Mixed Berry Preserves (or your favorite jam)

GLAZE

1½ cups Powdered Sugar 2 tablespoons Water 3 tablespoons Preserves

CLEAN POP TART ASSEMBLY

Dough:

1 | In a large bowl mix together the rye, bread flour, sugar, and salt and then set aside.2 | With a knife, cut the butter into small cubes and add them to the flour mixture. (Make sure to heavily coat the butter in the flour.)3 | Pour the dry mixture onto a flat countertop, and with a rolling pin gently roll the butter pieces flat onto the flour, creating thin small strips of butter throughout. (Make sure not to combine them or let the butter melt.)4 | Place the dry mixture back into a large bowl and refrigerate for 10 minutes.5 | Combine the chilled apple cider vinegar and water, and drizzle a small amount of liquid over the flour and butter mixture. 6 | Gently begin to fold the mixture onto itself to incorporate the liquid. Continue adding liquid until you have flaky layers of combined dough. 7 | Wrap the dough ball in plastic wrap and refrigerate for 2-4 hours, or overnight. 8 | Once it’s been refrigerated for your desired amount of time, remove and place it into the oven at 350 degrees.9 | Cover the countertop with all purpose flour and place the dough ball in the center. (The dough may need to thaw before you roll it.) 10 | When ready, using a rolling pin, roll out the tart dough to about ¼ of an inch thick (working quickly to not let the dough cool or the butter to melt). 11 | Cut the dough into 4-inch x 3-inch rectangles (making about 24 total). 12 | Place the desired preserves into the center of half of the rectangles, topping with the remaining rectangles. 13 | Using a fork, crimp the edges closed and place the tarts onto a baking sheet. 14 | With an egg yolk, brush the scrambled yolk onto the tops of the tarts to create a golden crispy texture while baking. 15 | Place the tarts in the oven and bake until golden brown (about 30 minutes). 16 | Remove from the oven and let tarts cool completely.

Glaze:

16 | In a small bowl, sift your powdered sugar, adding in water and fruit preserves. 17 | Whisk until smooth, adding more water if needed. 18 | Drizzle glaze over your tarts and enjoy! *Yields 12 pop tarts.Rye Goods Co. is an all organic company focused on quality California-sourced ingredients and sustainability.
