Sweet Potato Oatmeal Cookie

SWEET POTATO OATMEAL COOKIE INGREDIENTS

1 pound Sweet Potato6 tablespoons Coconut Oil, melted1 tablespoon Ground Flax3 tablespoons Water1 tablespoon Vanilla Extract1 cup Old-Fashioned Oats¾ cup Oat Flour½ tablespoon Sea Salt½ tablespoon Baking Powder½ cup Shredded Coconut, unsweetened¾ cup Walnuts¾ cup pecans¾ cup raisins (or cranberries)3 tablespoons Pumpkin Pie Spice, unsweetened

SWEET POTATO OATMEAL COOKIE ASSEMBLY

1 | Halve sweet potatoes and toss with 1 tablespoon of coconut oil. 2 | Roast at 375 degrees for 35-35 minutes until soft and caramelized. Once cooked and cooled, remove skin. (Meanwhile, combine water and flax and let sit.)3 | Toast nuts, cool, and chop. Combine with oats, oat flour, sea salt, baking powder, shredded coconut, raisins, and spices. 4 | Combine sweet potato, remaining coconut oil, flax/water mixture, and vanilla.5 | Combine wet and dry ingredients. 6 | Scoop onto baking sheet by rounded tablespoon. 7 | Bake 9-12 minutes at 350 degrees.
