Citrus Everything

In the hustle and bustle of life, we tend to forget to take care of ourselves. Instead, we’re always making sure someone else has their lunch, their coffee's hot, their homework is completed, they're nourished, and then to top it off, we gotta make it to work on time. We’re always racing against the clock which can be taxing on both the mind and body. It’s important to take care of the well-oiled machine that we vacate. Eating antioxidant-rich fruits and vegetables are the first step in building a stronger immune system and ultimately promoting good health. It wasn’t that long ago that our ancestors handed down the practice of using the entirety of a fruit, vegetable, or animal protein. They did this for a few reasons. They were either dirt poor or they came from family that once was, and so preservation was all they had to survive. The idea of “waste not, want not” was permanently engraved in their brains and was since passed down from generation to generation.Adopting just the basics of this principle, we present two simple recipes that can be used multiple ways, reap many benefits, and aren’t time consuming!| INGREDIENTS |

Combine in small sauce pan or pot over low heat for 3-5 minutes. You can garnish with cinnamon and/or a cinnamon stickCitrus 2| CITRUS ZEST DRESSING |

  • 1/2 cup Greek Yogurt
  • 2 Tbsp fresh lemon juice
  • 1/4 tsp Lemon Zest

Use this dressing as a marinade for baked chicken, or as a binder for your eggplant before dipping in gluten free bread crumbs, or simply as a dressing in your favorite quinoa salad.
